One-Pan Chili

Ingredients
  1. 2 Tbls. olive oil
  2. 1/2 onion, diced
  3. 1 stalk celery, diced
  4. 1 bay leaf
  5. 1 tsp. cayenne or red pepper flakes
  6. 2 tsp. dried oregano
  7. 1/2 c. tomato juice
  8. 1 c. ground beef
  9. 1 can black beans, drained
  10. grated colby jack cheese
  11. chopped cilantro
  12. minced jalapeno
Instructions
  1. Saute the onion, celery, and beef in a frying pan. When beef is done, drain off excess fat, reduce the heat a bit and add cayenne, bay leaf, and oregano. Cook about 3 minutes longer. Add the tomato juice, beans. Cook until heated completely through, or until slightly thickened.
